Summer is on the horizon and high on Goat Hill, The Endless Summer Grill is up and running.

The new restaurant at the Shelter Island Country Club is under the direction of Chef Peter Ambrose and in addition to the full food menu with dishes like fish tacos, baby back ribs and linguini with clams, taking center stage at the bar are some creative new cocktails concocted by Chef Ambrose himself especially for this hilltop location. 

After a round of golf, you might be tempted to go with the Thyme Lemonade. A refreshing cocktail served in a tall cold glass, this drink is a combination of vodka, lemonade, thyme and simple syrup and offers an ideal way to cool off after a hot day on the course.

Because the views from the clubhouse are stupendous, you may want to opt for something to sip while you watch the sun go down after a long, lazy day on the Island. In that case, opt for The Endless Summer Sunset Margarita. This one offers quite a kick and is made with a delightful combination of tequila, simple syrup, blood orange juice and fresh lime.

Add some ice, stir with a cool summer breeze and one amazing view. What more could you ask for to kick off the summer?
