The solstice is behind us and summer is officially here. Why not head over to Shelter Island Heights and Red Maple at The Chequit to sample one of their unique summer cocktail concoctions?
Red Maple bar and restaurant is located on the lower level of the Chequit Inn. Both establishments opened their doors just last summer after undergoing extensive renovations and the redesign has really livened up the place.
Red Maple’s bright interior leans toward contemporary simplicity while the bar serves up a menu of creative and unique cocktails, including its two signature drinks — the Red Maple Margarita and the Chequit Fizz.
“We go with what people like,” explained food and beverage manager Lindsay Purcell when asked why margaritas, in particular, seem to be making so many cocktail hit lists these days. “They’ve always trended, largely because of Cinco de Mayo. People really get into it.’
And what’s not to get into? Red Maple’s “north meets south” variation on the theme offers an enticing combination of Tequila 1921, maple simple syrup, fresh lime and pomegranate.
If you like something with a little more pop to it, go for The Chequit Fizz, which was a popular Red Maple offering last summer and is back on the menu, but this time with a twist.
“It’s making a comeback with lime this year instead of lemon” explained Purcell.
The Chequit Fizz is a refreshing blend of Queens Courage gin and fresh squeezed lime juice served with soda.
Other intriguing offerings at Red Maple’s bar include the D.B. Pimm’s Cup with Pimms No. 1, lemon lime soda, ginger ale, cucumber, apple, strawberry and mint; the cool Gin Spritz, a combination of Monopolowa gin, Prosecco, St. Germain and peach syrup; and the Sugarcane, with Angostura
